1. Anzac Biscuits

Anzac Cookies

Ingredients (Makes 25)

  • 1 cup oatmeal
  • 1 cup plain flour
  • 1 cup sugar
  • 3/4 cup coconut
  • 100g butter
  • 1 tablespoon golden syrup (or maple syrup)
  • 1 teaspoon baking soda
  • 2 tablespoons boiling water

Cooking Instructions

  1. Combine the oatmeal, flour (sifted), sugar, and coconut in a big bowl.
  2. Put the butter and golden syrup in a saucepan, stir over low heat until the butter has melted.
  3. Mix the baking soda with the boiling water and add to the butter and golden syrup.
  4. Add the butter mixture, while still warm, to the dry ingredients and mix well.
  5. Place the mixture, 3 tablespoonfuls, on a greased baking tray leaving space of about 4cm in between. Then flatten slightly with a spoon.
  6. Bake in preheated oven at 150°C for about 20 minutes until lightly browned.


2. Chocolate Crackles

Ingredients (Makes 20)

  • 4 cups Rice Bubbles (Rice Krispies)
  • 1 cup coconut
  • 2/3 cocoa
  • 1 1/2 cups icing sugar
  • 200g shortening
  • 20 paper muffin cups

Cooking Instructions

  1. Mix Rice Bubbles, coconut, cocoa, and icing sugar (sifted) in a big bowl.
  2. Melt the shortening in a saucepan over low heat, and add to the dry ingredients.
  3. Stir until mixed well.
  4. Pour into paper muffin cups, and refrigerate until set.


3. Lamingtons

Lamingtons

Ingredients (Makes 16)

  • The Sponge cake (you can buy one instead at your bakery or supermarket)
  • 2/3 cup granulated sugar
  • 5 eggs
  • 1/3 cup cornstarch
  • 1/2 cup plain flour
  • 1/2 to 1 teaspoon baking powder
  • 2 cups desiccated coconut
  • The Icing
  • 4 cups icing sugar
  • 1/2 cup cocoa
  • 1 tablespoon butter
  • 2/3 cup milk

Cooking Instructions

  1. Lightly grease a square cake pan (23cm x 23cm).
  2. Preheat oven to 180°C.
  3. Sift together the cornstarch and flour.
  4. Beat the eggs with a mixer in a bowl for 10 minutes until creamy.
  5. Add the sugar, 1/2 or 1/3 at a time, to the egg mixture, stir well after each addition until the sugar dissolved.
  6. Add the dry ingredients and stir gently.
  7. Pour into the cake pan, bake for 30 minutes. (Stick a skewer into the cake. If nothing sticks to it, then the cake is ready.)
  8. Prepare the icing while baking. Sift the icing sugar with cocoa into a heat-resistant bowl.
  9. Add the butter and milk and mix well.
  10. Place the bowl in hot water and mix well until the butter has melted.
  11. Remove the slightly cooled cake out of the pan, and leave to cool.
  12. Cut the cooled cake into 16 squares, dip each square in the icing, and cover with coconut.


4. Toffees

Ingredients (Makes 10)

  • 3 cups sugar
  • 1 cup cold water
  • 1/4 cup Brown Malt Vinegar
  • 10 paper muffin cups

Cooking Instructions

  1. Put the sugar, water, and Brown Malt Vinegar into a saucepan, and stir over low heat until sugar has dissolved.
  2. Increase heat and boil uncovered for 15 minutes (or until a small amount, when poured into cold water, will harden into small balls.)
  3. Remove the saucepan from heat, put it into a big bowl of cold water for 1 minute.
  4. Remove the saucepan from water, allow bubbles to subside.
  5. Pour into paper muffin cups. Leave 2 minutes before decorating with toppings of your choice, like coconuts, etc.


5. Fairy Bread

Ingredients (Makes 16)

  • 4 slices of bread
  • 2 tablespoons butter (softened)
  • 2 tablespoons Hundreds and Thousands (colored sprinkles)

Cooking Instructions

  1. Cut crust off the bread, spread each slice with butter.
  2. Sprinkle the Hundreds and Thousands on the bread, cut each slice into 4 triangles.


6. Sausage Rolls

Ingredients (8)

  • 250g ground beef
  • 1 tablespoon chopped parsley
  • 1 tablespoon plain flour
  • 1/2 teaspoon salt
  • Pepper
  • 1/4 cup water
  • 2 pieces frozen pie sheet (crust)
  • 1 egg

Cooking Instructions

  1. Put the ground meat, flour, a bit of pepper, and water in a frying pan, fry over medium heat for about 5 minutes.
  2. Pour the meat onto a plate and cool.
  3. Cut each piece of pie sheet into 4 equal squares.
  4. Place 1/8 of the meat on each square, little off the centre, in bar-like shape.
  5. Fold one side of the pie sheet over the meat.
  6. Fold over the other side of the sheet.
  7. Press the edge of the pie sheet with the back of a kitchen knife so that it does not come off.
  8. Lightly brush the outside of each roll with beaten egg.
  9. Bake in preheated oven at 220 to 260°C for 15 minutes.
  10. Sprinkle over chopped parsley.
